What is the purpose of "pasteurizing" milk—is it to make milk safe to drink or simple to kill what makes it beneficial to our health? You decide:

* Standards for a "boil water advisory": boiling at a rolling boil [100° C or 212° F] for 1 minute”. This kills pathogens.
* Standard for pasteurizing milk: “
heating to a higher temperature, 72° C (162° F), and holding for 15 seconds”. Does this kill more then just the beneficial enzymes?
